Chotto Matte, a new bar and restaurant by Kurt Zdesar — whose credits include Nobu and Mews of Maybair — features three floors where you can not only try exotic cocktails and experimental Japanese-Peruvian food, but also feel the vibrations of underground Tokyo in central Soho.
Trendy Japanese-style graffiti on the walls, minimalist furniture, and a view of Soho — that's what we call globalization. The novel fusion of Japanese and Peruvian cuisine represents a trend in contemporary cookery called "Nikkei," which is what Chotto Matte serves. Nikkei combines traditional ingredients from both countries: raw fish, seaweed and wasabi meet corn, quinoa and cacao. Throw in some herbs and spices, and you get a completely new type of cuisine.
We recommend: sea bass ceviche, tuna tartare and yellowtail, ebi harumaki ponzu salsa (a crêpe with shrimp and shiitake spread), pescaditos (a mix of mussels, calamari, shrimp, and jalapeno sauce), langostas con salsa citrica (langoustine with coriander, chili, and lemon). Meat lovers could live off the steak filet or the grilled chicken.
